Pepper vines climb shade trees in the Western Ghats and ripen slowly in monsoon humidity. Late picking and slow sun-drying are what give a Tellicherry-style grade its size, its citrus lift and its long resinous finish.

Kampot-style pepper is known for a lighter, more perfumed character than most black pepper — floral and mineral rather than purely hot.

Timut is a Sichuan-family berry rather than true pepper. Its aroma is startlingly close to grapefruit peel, with a light tingling finish.

Aleppo- and Urfa-style chillies are dried differently — one bright and fruity, the other sweated overnight until dark, raisined and faintly smoky. Sumac grows on the same hillsides.
